Production of Red Bell Peppers Jam with the Addition of Palm Sugar and Citric Acid as A Jam InnovationHigh Vitamin C and Antioxidants for People with Diabetes Mellitus

ABSTRACT

Diabetes mellitus (DM) is a collection of symptoms that arise in someone who has an increase in blood sugar (glucose) levels due to an absolute or relative deficiency of the hormone insulin. Diabetes mellitus is caused by a chronic disorder especially in the metabolic system of carbohydrates, fats, and proteins in the body.According to the consensus compiled by Indonesian endocrine experts, what is meant by people classified as diabetes mellitus if fasting blood sugar levels are more than or equal to 126 mg / dl and the blood sugar level is more than or equal to 200 mg / dl.This study aims to determine the effect of the addition of citric acid and palm sugar in the production of red bell pepper jam on levels of vitamin C and antioxidants as a snack. The research design used was a Completely Randomized Design (CRD). Determination of the formulation in this study is palm sugar and citric acid which are, 50: 3, 60: 3, 70: 3, 50: 3,5, 60: 3,5, 70: 3,5, 50: 4, 60: 4 and 70: 4 every treatment is repeated 3 times. Chemical analysis has a significant effect with p (0.032) < sig (0.05). The best treatment in this study occurred in treatment 5 with a formulation of 60 grams of palm sugar and 3.5 grams of citric acid with a content of vitamin C 110.12 mg, antioxidant activity 54.66%, the color is bright red, scent slightly languid, smeared slightly soft and taste slightly sour. The serving dose for jam snack is 3 times (20 grams) in one day.
