Antioxidant Functional Drink for Atherosclerosis Patient

ABSTRACT
Currently, many kinds of diseases were mostly caused by free radicals and consumption of unbalanced nutritional needs such as consuming excess fat that if in the long term could caused atherosclerosis (narrowing of blood vessels). Atherosclerosis could be prevented and treated with high-antioxidant diet therapy. Antioxidant types of anthocyanin proven to reduce the incidence of atherosclerosis. The skin of dragon fruit and red rose petals contain high anthocyanins. The purpose of this study was to make a high functional antioxidant drink in the form of syrup for atherosclerotic patients. This research was an
experimental research with Completely Randomized Design (RAL) method. There were eight treatments in dragon fruit skin formulations and red roses that are 90%: 10%, 80%: 20%, 70%: 30%, 60%: 40%, 50%: 50%, 40%: 60%, 30 %: 70%, 20%: 80%. Based on the research result, P1 treatment with 90% dragon fruit skin formulation + 10% red rose petal was the best treatment with anthocyanin content 30,56 mg / 100 ml, color was very like / red concentration, likes / sweet, unpleasant. The nutrient composition of syrup was calori 159.45 kcal, carbohydrate 2 gram, anthocyanin 15,3 mg and antioxidant activity 43,3%. Meat size of high antioxidant syrup of red roses and dragon fruit skin for atherosclerosis patients were 3 times a drink in a day with a volume of 50ml each time drinking.
