ABSTRACT
Tofu is a type of food that made from soy by concentrating soy protein and printing it through the process of protein deposition at the isolation point, with the addition of other permitted elements. Processing of tofu quality control needs to be done as an effort to improve the tofu quality, because tofu is a food product that has a high enough moisture content that can result tofu damaged and decay easly. This research aimed to know whether the production process done by the company could produce tofu which suits the standard decided by the company in regards to its uniformity of tofu size and hygiene. By implementing an analysis method of pareto chart, ishikawa diagram, and control chart the research result showed that based on the pareto diagram by doing 20 times observation of thing that cause defects in tofu is not uniform cutting size and dirty with the same incident occurrence. Based on ishikawa diagram shows that tofu defect due to not uniform cutting size caused by mistake of employee because careless and other factor on wrong size is knifepoint which ends caught on the base of tofu sheet. And defects tofu caused by production employees, additives and machine tools. And the result of the research on the control np in tofu are points out of control limits, so that it can be stated that the production process has not been able to fill the quality controllingstatistically until the company needs tight controlling. And the point of capability process is 97% indicate the incapable in the good quality tofu produce 97% and 3% of the company’s process is not able to produce good and quality products so it needs to make improvements.
