ABSTRACT



Situbondo has the potential marine resources can be used to produce many kind of processed products. KUBN (Joint Venture) AL-IKHLAS Pesisir Ketah in Suboh Subdivision Situbondo Regency is one of the micro small middle enterprises producing fishery products through the brining process. Brining needs quality control done by sortating the fish as the raw material. The criteria of the fish used consists of the freshness of fish and the wholeness of the fish body as the effort to improve the brine quality. This research done by observing the fish quality control as the raw material to identify the amount, causes, problems, and quality control process statistically using control chart, cause and effect diagram, and pareto diagram as the helping tools. Through this research obtained that based on p control chart at the fish freshness criteria shows that statistically there are points of the research result which are out of UCL and LCL bounds at fish freshness variable showing that the quality is uncontrolled, at the wholeness of the fish body criteria statistically there are no points which are out of UCL and LCL bounds showing that the brine quality is controlled. The factors causing quality damage are human factor, material, environment factor, and equipment factor. The main problem affecting the brine quality control is the fish freshness.
